Fun to make and a great dish for kids to help out with, the chef’s Lasagna Rolls are made with pre-cooked lasagna noodles (sorry, no-boil noodles won’t work here). As De Laurentiis notes, “don’t cook them all the way, or they’ll get soggy as they bake in the oven.”
Once the noodles have cooled, a filling of whole-milk ricotta, prosciutto, cooked and squeezed-dry frozen spinach, grated Parmesan, egg, salt, and pepper is spread on each lasagna noodle.
Each lasagna bundle is rolled up lightly (If they’re too tightly rolled up, the filling will ooze out the sides) and all the rolls are placed in a baking dish on top of the bechamel sauce. The rolls are topped with marinara sauce and shredded mozzarella cheese.
Cover the casserole with foil wrap and bake in a 450-degree F oven for 20 minutes; remove the foil and continue baking for another 15 minutes. Once the dish is removed from the oven, it can be served with additional marinara sauce.
